You can make it in no time. It comes in the ideal shape for snacking and has a delicious, fluffy texture. 90-second bread will help you stick to the keto diet without any need for sophisticated baking or cooking skills.

What is 90-Second Keto Bread?

90-Second Keto Bread is a quick, low-carb bread substitute you can easily make in the microwave. It’s great for breakfast or a keto snack in between meals.

Unlike ready-made low-carb or keto bread from the grocery store, it comes without potentially harmful additives.

The 90-second keto bread is delicious, digestible, soft, fluffy, gluten-free, and sugar-free and contains no stabilizers, emulsifiers, sweeteners, or lectins. Therefore, it is suitable even for people with gut and autoimmune diseases.

I was initially apprehensive about preparing bread in the microwave. However, after extensive research, I have to say that I could not find any significant health disadvantages of preparing bread in the microwave (Geczi et al. 20131).

Only heating for a particularly long duration can exceptionally lead to disadvantages for some foods (Michalak et al. 20202).

Short heating in the microwave even offers benefits in terms of nutrient availability compared to regular cooking or baking (Hoffman et al. 19853).

In this 90-second recipe, we want to spend less time preparing it than we would need for a delicious loaf of keto bread from the oven.

If you’re not comfortable with the microwave, I’ve included an alternative oven preparation method in the recipe.

Ingredients

This easy 90-second bread recipe comes together with just four essential ingredients:

  • Almond flour
  • Grass-fed butter
  • Free-range eggs
  • Baking powder

That’s why it takes just as little time to prepare as baking in the microwave. The baking powder is necessary so that the bread rises appropriately and gets the usual consistency of bread.

Use

  • Spreads: This bread tastes delicious when spread with grass-fed butter and keto-friendly nut butter. It also tastes terrific with homemade low-carb spreads and vegetables.
  • Breakfast: 90-second bread can be topped with ham and cheese, just like a classic Viennese breakfast. It’s also worth trying out a delicious breakfast sandwich with egg, cheese, and bacon!
  • Sandwiches: The bread substitute is ideal as a snack between meals. You can top the keto bread like any regular bread or turn it into a satisfying sandwich loaded with lettuce, chicken, keto mayonnaise, or avocado and egg salad.
  • Toast: If you use the bread for classic grilled cheese, it tastes even better. I also like to enjoy it toasted with fresh avocados or guacamole.
  • Dessert: You can also turn the bread into a delicious dessert with cinnamon or berries and whipped cream.

Yes, the 90-second bread is suitable for keto. The ingredients are among the keto-friendly foods.

How Many Carbs Does the Bread Have?

A thick slice of 90-second keto bread has about 2.5 grams of net carbs. A thin slice has just 1.3 grams of net carbohydrates.

Only almond flour and baking powder contribute to the carbohydrates in a slice of 90-second bread (**):

  • Carbohydrates: 5.771 grams
  • Dietary fiber: 3.213 grams
  • Net carbs: 2.558 grams

Tips for Making the Best 90-Second Keto Bread

This recipe will not work with ground almonds because they do not have a fine texture. It would be best if you used natural blanched almond flour.

The bread turns out best in small ramekins 3-4 inches in diameter.

If you cut it in half, you’ll get ideal thick slices of bread. Cut it in half again, and you’ll get thin slices.

Toasting this 90-second bread gives it a much better texture. You can also toast it in a pan with grass-fed butter instead, which is incredibly delicious.

You can make the bread in bulk and easily store it in the fridge or freeze it for several months (more below).

How to Make 90-Second Keto Bread

To make it, melt the butter in a ramekin, microwave-safe bowl, or cup in the microwave.

Then add almond flour, egg, and baking powder and mix the dough with a fork until everything is well combined.

Microwave the filled form for 90 seconds on a high setting until the dough is firm.

To serve, run a knife along the edge to loosen the batter. Turn the 90-second keto bread onto a plate and cut the piece in half once for thick slices.

If you prefer thin slices of bread, cut the two slices in half again.

The bread tastes best toasted. For this purpose, use a conventional toaster or a pan in which you toast it with delicious grass-fed butter.

To make the bread in the oven, bake it in a preheated oven at 190°C for 10-12 minutes.

  • 3 tbsp almond flour blanched
  • 1 tbsp butter grass-fed
  • 1 egg free-range
  • 1/2 tsp baking powder

Instructions

  • Melt butter in a 3-inch ramekin, microwaveable bowl, or cup. Then add almond flour, egg, and baking powder. Mix with a fork until everythingis well blended.
  • Microwave for about 90 seconds on a high setting until the doughis firm. Run a knife along the edge to loosen the dough, then invert it onto aplate. Cut in half (cut in half again for thin slices). Toast in a toaster oven(or skillet) for the best flavor.

Notes

In the oven: Preheat the oven to 375°F (190°C). Bake in the ramekin for 10-12 minutes.

How Long Can You Store 90-Second Bread?

You can keep 90-second bread in the refrigerator for a week or in the bread drawer for a day.

Freezing the low-carb bread is also possible. I don’t advise preparing the dough and keeping it in the refrigerator.

It is better to bake the whole mixture once and then freeze the finished bread.

Can You Freeze 90-Second Keto Bread?

Yes, you can freeze keto mug bread for up to 6 months.

It is helpful to prepare 90-second keto microwave bread in large batches and freeze it in an airtight container or zip freezer bag.

Use baking paper between the pre-cut bread slices so they don’t freeze together. This way, you’ll always have low-carb bread to pop in the toaster and enjoy immediately.
